Date Night, Steak Night

I love myself a date night just as much as the next person, but the cost of a babysitter + drinks + dinner only really allows me one night out with my husband/friends a month. So John and I have been working on some weekend Date Nights at home! Kids to bed, drinks poured, and we are cooking dinner together and talking to each other about things other than our kids…..for at least the first 10 minutes, and then we are back to our favorite subject. Over the past couple months, our go-to at home Date Night dinner has been steak and asparagus…we can’t stop, and I really think it’s because we have perfected the cooked-at-home steak! And you are in luck – because I’m going to share it with you too!

{PS :: We’re going to be using our stove and our oven to get this perfectly done, so for all the grillers out there…sorry!}

Date Night Steaks

Necessities

Steak :: We like New York Strip but have also used Rib Eye. I’m not a huge fan of fatty meat, and I find the Strips to be a little less fatty – but both are delicious!
Cast Iron Skillet :: Big enough so both steaks fit into it at the same time.
Accouterments :: Oil, butter, salt & pepper, foil, tongs and and an oven mitt.

Step 1 :: Prep the Steak

Let the steaks come to room temp, and oil/salt & pepper both sides. I give them a nice coating of everything, I love the crunchy S&P crust!

Step 2 :: Heat the Oven

Turn your oven’s broiler on high and put your skillet in the oven. Let it heat up in there for 15-20 minutes.

Step 3 :: Get Ready

Get everything ready to go because once you start, things will move fast! Cut the butter into pats {you’ll need 8}. Have your tongs and oven mitt ready!

Step 4 :: Stovetop Sear

Turn your stove on high and move the screaming hot skillet from the oven onto the stove. Using your tongs, place the steaks in the skillet for 30 seconds on each side. In between flipping, put two pats of butter on each steak. I count Mississippis for this step – you don’t want to go too far over that 30 second mark!

Step 5 :: Finish in the Oven

Once both sides are done, move your skillet back into the oven {still set on HIGH Broil} for 2 minutes. After two minutes, you are going to flip the steaks using the tongs and do 2 minutes on the other side – this is when I use my other 4 pats of butter. {Note :: 2 minutes on each side gives you a steak in between medium-rare/medium. You can increase/decrease cooking time for your liking.}

Step 6 :: Let them Rest

When the 4 minutes is up, pull your skillet out. Y’all, it’s hot and heavy – be careful! I put my steaks on a plate, pour any juice, butter, drippings over them, and cover in foil to let sit for 10 minutes before enjoying.
