Pumpkin Recipe Roundup

As soon as fall hits, I am all about pumpkins. Pumpkin patches, pumpkin decorating, pumpkin scented candles, and of course – anything and everything flavored pumpkin! I have a feeling I am not alone on this. So for all my pumpkin loving friends, here is a pumpkin recipe roundup including muffins, cake, cookies, bread, roll, dip, waffles, and coffee creamer. I must warn you, these are not the healthiest recipes, but they are oh so delicious! If you are looking for a healthy{ish} recipe, try the first one listed. Otherwise, enjoy them ALL!

Pumpkin Recipes

Maple-Sweetened Pumpkin Muffins with Oats

1/3 cup melted coconut oil
1/2 cup maple syrup or honey
2 eggs at room temperature
1 cup pumpkin puree
1/4 cup milk {can use almond milk or other milk if needed}
1 tsp. baking soda
1 tsp. vanilla
1/2 tsp. salt
1 1/2 tsp. pumpkin pie spice
1 3/4 cups spelt flour or whole wheat flour
1/3 cup old fashioned oats

Directions
1. Preheat oven to 325 degrees. Grease muffin pan or use muffin liners.
2. Beat oil, maple syrup, and eggs. Mix in the pumpkin puree and milk, followed by baking soda, vanilla, salt, and pumpkin pie spice.
3. Add the flour and oats and mix until just combined.
4. Fill muffin cups and bake for 20-25 minutes or until toothpick comes out clean. Makes about 10 muffins.

Pumpkin Crunch Cake

1 pkg. Duncan Hines yellow cake mix
3 eggs, beaten
1 16 oz. can pumpkin
1 12 oz. can evaporated milk
1 1/2 cups sugar
1 tsp. pumpkin pie spice
1/2 tsp. salt
1 cup pecans
1 cup melted butter

Directions
1. Preheat oven to 350 degrees. Spray 9×13 baking dish with cooking spray.
2. Combine pumpkin, milk, eggs, sugar, spice, and salt. Mix well. Pour into the baking dish.
3. Sprinkle dry cake mix evenly over the pumpkin mixture. Top with pecans and drizzle melted butter over the top.
4. Bake for 1 hour until golden brown and bubbly {sometimes longer than 1 hour}. Cool completely before serving. Top with cool whip if desired.

Pumpkin Chocolate Chip Cookies

1/2 cup butter {1 stick}
1 1/2 cups sugar
1 cup canned pumpkin
1 egg, beaten
1 tsp. vanilla
2 1/2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. salt
1 6oz. package of semi-sweet chocolate chips {or more}

Directions
1. Preheat oven to 350 degrees. Mix first 5 ingredients.
2. Mix remaining ingredients in separate bowl except chocolate chips.
3. Add wet and dry ingredients and mix well. Fold in chocolate chips.
4. Bake approximately 15 minutes.

Pumpkin Bread

1 can {15oz} pumpkin puree
4 eggs
1/2 cup vegetable oil
1 stick unsalted butter, melted and cooled
2/3 cup water
2 cups white sugar
1 cup light brown sugar
3 1/2 cups flour
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. pumpkin pie spice

Directions
1. Heat oven to 350 and grease three loaf pans.
2. Mix wet ingredients together, mix dry together, and then combine.
3. Bake for 50 minutes or until a toothpick comes out clean. Note :: The small loaf pans will cook faster.

Add-Ins :: You can throw in chocolate chips or pecans. This also tastes great with cream cheese frosting, but really – it’s delicious on its own.

Easiest Pumpkin Cookies

1 box spice cake mix
1 can pumpkin
1 12 oz. pkg chocolate chips

Directions
1. Preheat oven to 350 degrees.
2. Mix spice cake mix and pumpkin until well blended.
3. Stir in the chocolate chips.
4. Roll into balls and bake for 10-15 minutes.

Pumpkin Waffles with Whole Wheat

Ingredients

1 1/2 cups unbleached all-purpose flour
1/2 cup whole wheat flour
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. ground cinnamon
1/4 tsp. ground ginger
1/4 tsp. ground nutmeg
3 eggs
1 3/4 cup milk
3/4 cup cooked and mashed pumpkin or canned pumpkin puree’
1/2 cup oil of your choice (I have used canola or coconut oil)
1/2 cup chopped nuts, optional

Pumpkin Roll

Cake
1/4 cup powdered sugar {to sprinkle on towel}
3/4 cup flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. ground cloves
1/4 tsp. salt
3 eggs
1 cup sugar
2/3 cup pumpkin puree
1 cup walnuts, chopped {optional}

Filling
8 oz. cream cheese, at room temperature
1 cup powdered sugar, sifted
6 tbsp. butter, softened
1 tsp. vanilla
powdered sugar {optional for decoration}

Pumpkin Dip

3/4 cup cream cheese, softened
1/4 cup packed brown sugar
1/2 cup canned pumpkin
1 tbsp. maple syrup
1/2 tsp. cinnamon

Pumpkin Pecan Chocolate Chunk Cookies with Maple Brown Butter Frosting

Cookies
2 1/4 cups self-rising flour
3 tsp. pumpkin pie spice
3/4 cup butter, at room temperature
1 1/4 cups light brown sugar
1 cup sugar
2 tsp. vanilla
2 eggs
1 cup canned pumpkin
1 cup chopped pecans
1 1/2 cups semi-sweet chocolate chunks

Frosting
3 cups sifted confectioners sugar
1/2 cup butter
1/4 cup milk
2 tsp. maple flavoring
